Vegan coconut pancakes

From the moment we step foot in front of his stall on Brick Lane, we were welcomed with a smiley face and a “what would you like to have?” warm welcome.

His menu is really hard to decide on. He offers a variety of pancakes, but also the obvious coconut water straight from the coconut. We decided to go for the cocoa and the classic pancakes. We didn’t travel all that way just for a small snack ๐Ÿ˜€ .

Talking to Benny, I was immediately struck by his modesty and kind of hippie perspective on life. The man has had his stall for three years now and he’s so happy with it. Keeping things simple seems to be his motto. His vision is to have a stall he could set up in different places in Europe and just travel. No worries on electricity, gas and other brick-and-mortar worries. Just doing pancakes people love.

His secret lies in his dough which he makes with fresh coconut water. The mix is paleo, low-carb, keto, vegan and “chemical-free”. What more could you ask for? You can choose in between different types of pancakes, with or without fruits. The syrups he adds on top – chocolate or salted caramel are a few of the options – are just heavenly.

  1. I heard about these pancakes in my home town (New York ๐Ÿ‡บ๐Ÿ‡ธ). I don’t know when I will be able to fly to the UK ๐Ÿ‡ฌ๐Ÿ‡ง. Will you share the recipe for your coconut pancakes?

    1. Hi, Loretta! The only thing I know about the recipe is that one of the ingredients is coconut water. I am sure Benny would not share much because it’s part of their success. All I can say is that they were amazing! ๐Ÿ™‚
